In the project Food forest taste tests, Genomic Gastronomy explores an alternative to the Netherlands’ over-optimized agricultural systems that are vulnerable to climate change. According to the design studio, the key is to be found in food forests, as these are self-sustaining systems that work with nature rather than against it. Working with food-forest farmers, small businesses and home cooks, Genomic Gastronomy aims to develop rituals, tools and recipes to promote and better integrate seasonal produce into our everyday eating habits. The first phase will test different ways to process and present the fruits, seeds, nuts, shoots, leaves and roots from food forests. In the second phase, the investigated design approach will be further refined and made suitable for multiple food forests.
